CAUSSE DE SAUVETERRE

It is an integral part of the life of the country of Chanac. This vast limestone plateau which extends as far as Aveyron is "the land of the sheep". The cellars of the AOC Roquefort come to seek, here, an exceptional milk on an exceptional land. The Causse de Sauveterre draws its character from the typical habitat found there. The dwellings are built with stone vaults and slate roofs. This limestone is the raw material that abounds on the causse, unlike wood.
